The Holy Grail

Well, it took me a few days longer than I had planned, but here is the Holy Grail of restaurant recipes…
P.F. Chang’s Chicken Lettuce Wraps
Special Sauce
¼ cup sugar
½ cup water
2 Tbls. soy sauce
2 Tbls. rice vinegar
2 Tbls. ketchup
1 Tbls. lemon juice
1/8 tsp. sesame oil
1 Tbls. Chinese hot mustard
1-3 teaspoons chili garlic sauce

Stir-fry Sauce
2 Tbls. soy sauce
2 Tbls. dark brown sugar
½ tsp. rice vinegar

Chicken Mixture
3 Tbls. vegetable oil
1 lb. ground chicken
1 cup diced water chestnuts
2/3 cup diced straw mushrooms
3 Tbls. chopped green onion
1 tsp. minced garlic

Iceberg lettuce leaves
Maifun rice sticks or Asian pasta

1. Make special sauce by dissolving the sugar in the water in a small bowl. Ad soy sauce, rice vinegar, ketchup, lemon juice, and sesame oil. Mix well, and refrigerate until ready to serve. At the table you will add the desired amount of Chinese mustard and garlic chili sauce (to taste)

2. Prepare stir-fry sauce by mixing soy sauce, brown sugar, and rice vinegar together in small bowl.

3. To prepare the filling, bring 2 Tbls. of oil to high heat in a wok or large frying pan. Saute chicken until cooked- remove, but keep oil in pan.

4. As the chicken cools, be sure mushrooms and water chestnuts have been diced to size of small peas. Add remaining Tbls of oil to pan. Add chicken, garlic, water chestnuts, and mushrooms to the pan. Add the stir-fry sauce to the pan and sauté for a couple of minutes until heated through.

5. Spoon onto a dish on top of noodles.

6. Serve with the lettuce leaves.

7. Eat with the special sauce- be sure to add the mustard and chili-garlic sauce until you have it like you like it!
